Four flour bean mix - gluten free flour  

You gluten free people may know what to do with this - I thought I would post it...

This recipe comes from "the gluten free gormet bakes bread" by Bette Hagman

This exchanges cup for cup with wheat flour and has enough protien so you do not need to alter any recipe for cookies or cakes except for adding some xanthan gum.

MAKES 9 CUPS

Garfava bean flour 2 cups (this is garbanzo and fava bean)
sorghum flour 1 cup
cornstarch 3 cups
tapioca flour 3 cups
