OATMEAL MUFFIN MIX

This muffin mix can be stored in airtight containers (like a coffee can) for months.

The mix:
5 � C sifted flour
2 Tbsp baking powder
1 Tbsp salt
1 1/3 C sugar
1 � C shortening (like Crisco)
5 � C quick oats


Sift together 1st 4 ingredients, then cut in the shortening until particles the size of rice grains are formed. Add the oats and mix well.
