Watermelon Granita  

6 cups peeled,seeded,and cubed watermelon
1/4 to 1/2 cup sugar
2 and 1/2 Tablespoons lemon juice

Process watermelon in a blender or food processor until smooth(about 4 cups puree).Pour into a bowl;add sugar and lemon juice,stirring until sugar dissolves.Cover and chill. Pour watermelon mixture into a 13x9 inch pan, and freeze,stirring occasionally, 3 hours or until firm. Scoop frozen mixture into balls using a large ice cream scoo, and serve in paper snow cone cups or dessert dishes. Yield 4 cups.
