Caramel Corn 
1 cup sugar
1/2 cup water
about 3 cups popped popcorn, well salted.

Grease a baking sheet or tray. (and I mean GREASE WELL)Set aside.

Put sugar in saucepan and add water - there should be just enough water to cover the sugar. Bring to a boil and lower heat just a little, to medium. Stir with wooden spoon (because a metal spoon will get hot all the way up the handle) until sugar mixture starts to turn golden brown. WATCH IT CAREFULLY AND STIR CONSTANTLY because it will burn in a second.

As soon as it starts to turn brown, remove from heat and throw popcorn in the pan. Stir popcorn and syrup together with wooden spoon - don't worry about crushing the popcorn. If you want it like crackerjacks you can throw in a cup of salted peanuts at this point too.

Empty everything out onto greased tray and let it sit just a few minutes to cool down. Break apart clumps.

A tip.....to clean the rock hard sugar that's stuck to the pan after you're done, fill the pan back up with water and bring to a boil - then wash the pan as soon as you empty out the boiling water - the sugar will clean right off.
