| STABILIZED WHIPPING CREAM Chill 1 cup whipping cream, beaters and mixing bowl. SPRINKLE 1 Tablespoon cold water with 1/2 teaspoon unflavored gelatin. Allow gelatin to soften about 5 minutes. PLACE the container (of gelatin) in a pan in 1 to 2 inches of simmering water; simmer until gelatin is melted. COOL. While whipping cream, as it begins to thicken, add gelatin. |
