ICE CREAM SANDWICHES

2 C             Butter, softened
2-1/2 C      Sugar
3                 Eggs. beaten
2 tsp           Vanilla
5 C             Flour
1 tsp          Baking soda
1-1/4 C      Cocoa or Carob powder
Breyers Natural Vanilla Icecream (in the black box) or any accepted vanilla icecream

Directions:
Cream butter, sugar, eggs, and vanilla.  Gradually add dry ingredients and mix well.  Roll into 4 tubes, wrap in plastic wrap in place in refrigerator for a few hours.  Heat oven to 350 degrees.  Cut 1/4 inch slices of cookie and place on ungreased cookie sheet.  Bake for 8-10 minutes.  Cool and fill with softened icecream.  Place on plate and freeze for 1/2 hour. Wrap with plastic wrap and freeze totally.

This recipe makes a bunch. You can cut the recipe in half or freeze 2 of the tubes of cookie dough for later.
