FRIED RICE

2 tbsp            Cooking oil
3 C                Cooked rice
2                    Green onions, chopped
3 tbsp            Soy sauce
1                    Egg
1/4 tsp           Salt
1/4C             Frozen pea & carrot micture


In a cup beat one egg with salt.  Heat oil in a wok or large deep skillet .  Stir in green onions; add egg mixture, stirring until scrambled.  Stir in rice; add soy sauce and mix thoroughly.  Add peas, carrots; mix well.  Simmer.

Serve with stir fry.
