PEAR CRUMB PIE

1            Pastry single crust pie
2 tbsp    Quick cooking tapioca
1 tsp      Finely shredded lemon peel
5 C        Peeled fresh pears (3C)
3 tbsp            Lemon juice
1/2 C             Whole wheat or White flour
1/2 C             Sugar
1/2 tsp           Cinnamon
1/2 tsp           Nutmeg
1/4 C             Butter

Combine sugar , tapioca, and lemon peel.   In a large bowl sprinkle pears with lemon juice, and add sugar mixture and combine.  Fill pastry with filling.  In a bowl combine flour, cinnamon, nutmeg.  Cut in butter; pour over top of pie.  Place foil around crust.  Bake at 350 for 25 minutes; remove from foil and bake 25- 30 minutes more.
Cool.
