PEAR SURPRISE CAKE
6 Pears
4 tsp. Cinnamon

4 Eggs
1 1/2 Cup Sugar
1 Cup Oil (I use Canola)
3 tsp. Baking Powder
3 Cups Flour
1/2 Cup Pineapple Juice
2 1/2 tsp. Vanilla

Peel and slice pears. Mix with cinnamon and set aside.

Preheat oven to 325*. Grease and flour bundt pan (or 9in tube pan). In a mixer, beat eggs, sugar and oil (beat oil well). Sift baking powder and flour together - add to beaten mixture. Add pineapple juice and vanilla, mix well.

Pour approx. 1/4 batter into prepared pan. Arrange 1/3 of pears on top. Repeat these layers ending with a layer of batter.

Bake in preheated oven at 325* for 1 1/2 hours.

You can sprinkle with powdered sugar when done, but it tastes delicious without any frosting.
