PEAR CAKE

1 1/2 cup oil
1 1/2 cup sugar
1/2 cup brown sugar
3 eggs
3 cup flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. salt
3 1/2 cup pears, diced and peeled
1 cup chopped walnuts
2 tsp. vanilla

INSTRUCTIONS
Preparation:
Combine oil and sugars; add eggs.
Combine dry ingredients and stir well.
Fold in pears, nuts, and vanilla. Batter
will be very stiff.

Pour into 10-inch tube pan and bake at 325
for 90 minutes or until toothpick inserted
into cake comes out dry.

Turn out of pan and let cool.

We had this with a scoop of Bryers. Yummy! I think it would be even better with a Caramel Drizzle/ Sauce.

This is a heavy cake.
