TROPICAL FRUIT CAKE

Ingredients:
3/4 c. ganulated sugar
2/3 c. packed brown sugar
1/2 c. cream cheese, softened
1/4 c. butter, softened
2 large egg whites
1 1/2 tsp. vanilla
2 tsp lemon rind
2 3/4 c. flour
1 1/2 tsp baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 1/2 c. buttermilk
1 c. peeled & diced mango
1 c. crushed pineapple, drained
1/3 c. flaked coconut

Preheat oven to 350.

Beat sugars, cream cheese and butter at medium speed of mixer until well-blended, about 5 minutes. Add egg whites one at a time, beating well after each addition. Beat in vanilla and lemon rind.

Lightly spoon flour into dry measuring cup & level with a knife. Combine flour, baking powder, baking soda and salt. Stir will with a whisk.

Add flour mixture to sugar mix alternately with buttermilk. Begin and end with flour mixture.

Stir in mangos and pineapple. Pour into greased 13 X 9 inch pan. Sprinkle coconut over batter.

Bake at 350 for 50 minutes or until toothpick inserted in center comes out clean (this only took about 40 minutes in my oven - watch your time!!)
