WHIPPED CREAM ICING

1 C         Whipping cream chilled
1 tbsp      Ice cold water
1/2 tsp     Unflavored gelatin
2-3 tbsp   Powdered sugar
1 tsp        Vanilla


Place  beaters, mixing bowl and whipping cream in refrigerator until cold.  In a small bowl sprinkle gelatin over water; allow to soften about 5 minutes.  Place in a pan with 1 -2 inches of water over stove.  Simmer until gelatin is melted; cool.  Beat whipping cream and as it begins to thicken add gelatin and powdered sugar.  Immediatley add vanilla.
