FISH TACOS~ STAGE 2

FRIED FISH FILETS: Amount varies, about 1/2 filet per taco. I use Trader Joe's Frozen Breaded Cod Filets (stage 2), but you could make your own. After cooking, slice fish into strips.

TORTILLAS: Soft corn tortillas are best, but flour tortillas taste good too.

TARTAR SAUCE: Recipe follows or any approved brand

CHOPPED LETTUCE

Cook fish and heat tortillas separate (I heat the tortillas in a hot skillet which has just a light rub of oil), but the microwave works too. Put fish, tartar sauce and lettuce onto tortilla, fold over and eat. If you don't have to make your own fried fish this is very quick and easy.


TARTAR SAUCE

1 Cup of Mayonaise
1/4 cup finely chopped onion
1/4 cup finely chopped dill pickle (stage 2)
Squeeze of fresh lemon to taste.
Mix together and let sit in refriderator for several hours before using.
This is how I make mine, but any tartar sauce is fine and you can vary the amount of onion and pickle to your own taste
