PAN FRIED SALMON

4 salmon steaks
1/2 cup of flour
1 tbsp olive oil
2 tbsp butter
1/2 lb mushrooms cleaned and quartered
1/2 cup sliced black olives
2 garlic cloves, smashed and chopped
1 tbsp chopped parsley
salt and pepper to taste
Lemon slices on the side.

Directions:
1) Preheat oven to 150F.
2) Dredge fish with flour
3) Heat the olive oil and butter in a large frying pan. When hot, add fish and cook 5 minutes over medium heat
4) Turn the fish over with a large spatula and season well. Continue cooking another 5 minutes, depending on the size of the fish.
5) Remove the fish from the pan, and place in the oven to keep warm.
6) While all 4 fish are in oven, heat the remaining butter in the pan. Add the mushrooms, garlic and parsley and cook through (4-5 minutes). Season with salt and pepper.
7) Sprinkle in lemon juice and continue cooking 30 seconds.
8) Remove salmon from the oven and served with vegetables on top.
