SALMON PATTIES

2 cups fresh bread crumbs
2 eggs
1 1/2 tbsp. dried parsley
1/4 cup finely chopped green onion
1 tsp. dried dill weed
1 tsp. fresh lemon juice
1/4 tsp. ground black pepper
1 (14.75 oz.) can salmon, drained (remove skin & bones)
2 tbsp. butter (for frying)

1) In a large mixing bowl, place 1 1/2 cups breadcrumbs. Set aside remaining 1/2 cup. Add eggs, parsley, green onions, dill weed, lemon juice and black pepper. Mix well.

2) Add salmon and mix with hands (I use a wooden spoon instead) breaking up salmon into small pieces. Form into about 8 patties; each about 1/2 inch thick.

3) Place remaining 1/2 cup breadcrumbs on a plate and dip both sides of the salmon patties into crumbs.

4) In a large skillet, melt 2 tbsp. butter (may need to add more as you are frying). Fry salmon patties over medium heat for about 3 min. or until golden brown. Turn and fry for about 3 more min.
