| HERBED BROILED SHRIMP & VERMICELLI 2 tablespoons extra-virgin olive oil 1 tablespoons lemon juice 1 tablespoons mixed herbs (parsley, thyme, mint, marjoram), roughly chopped. (Last night we used dried: parsley, thyme, and fines herb.) 1 teaspoons salt 1/4 teaspoon cracked black pepper 35 medium shrimp, peeled and deveined. In a large bowl, combine oil, lemon juice, herbs, salt, pepper, and shrimp. Cover and refrigerate for 20 to 30 minutes. Prepare Vermacelli (very thin spaghetti) as directed on package. Heat broiler. Remove shrimp from marinade. Broil shrimp until just done, about 5-6 minutes. Serve shrimp over pasta with fresh parmesean cheese. |
