GARLIC PARMESAN SHRIMP

1-1/2#          Shrimp, peeled & devained
1/4 C           Olive oil
4-5 cloves    Garlic
1/2#             Sliced mushrooms
8 oz             Plain wholefat yogurt
1 tbsp          Chopped green onion
1/2 tbsp       Chopped fresh parsley
                   Salt and Pepper to taste
1/4               Parmesan cheese
1/2               Finely diced celery
1/4               Bread crumbs

Mix parmesan cheese and bread crumbs together; set aside.  Saute in a large skillet the olive oil and shrimp for 3 minutes.  Add the sliced mushrooms and saute until tender.  Blend in yogurt, green onions, and parsley.  Season with salt and pepper to taste.  Add celery.   Cook for 5 minutes stirring continuously.  Put in casserole dish and sprinkle with parmesan cheese and bread crumbs.  Broil until a light crust forms on top.
