CARROT DONUTS

3-1/2C    Flour
4 tsp       Baking powder
2 tsp       Cinnamon
2 tsp       Baking soda
3/4 tsp    Salt
3/4 tsp    Nutmeg
3/4 tsp    Clove  ~  Stage 2
2 tbsp     Butter
1 C        Sugar
2            Eggs
1/3 C     Milk
1 C       Grated carrot
1 tsp     Grated lemon peel
             Oil frying

Combine 1-1/2 C flour, soda, powder, salt, and spices.  In a large bowl cream butter, sugar; add eggs one at a time. 

Gradually add flour mixture with milk alternately mixing until smooth.  Stir in carrots,lemon peel; add flour just until blended.  Turned soft dough on floured board; roll out to 1/2 inch thickness.  Cut with 3" floured donut cutter.  Fry a few at at time in oil at 375 degrees  Cook and turn donuts.  Drain on paper towels and glaze while warm. 

Glaze: 
2C        Powdered sugar
3 tbsp   Lemon extract
1/2 tsp  Vanilla

Mix and drizzle over donuts.
