PEAR COBBLER

Ingredients: 1/2 c sugar
1 T cornstarch
4 c of pear slices( I peel and slice 3-4 fresh pears)
1 t lemon juice
3 T shortening
1 c all-purpose flour
1 T sugar
1 1/2 t baking powder
1/2 t salt
1/2 c milk(Rice-Dream works great!)

Pre-heat your oven to *400. Mix 1/2 cup of sugar and the cornstarch in a saucepan. Stir in the pear slices and the lemon juice. Cook, stirring constantly until your mixture bubbles and thickens and boils. Boil and stir for 1 minute. Pour into an ungreased 2-quart casserole baking dish. Put in your oven to keep warm. Then in another bowl cut your shortnening into the flour,1 T sugar,the baking powder and the salt. Mix with fork until it resembles crumbles. Stir in the milk and mix. Drop spoonfuls all over your still-hot pear mixture until gone from the bowl. Bake for 30-35 minutes until the top is golden brown. Serve hot with a scoop of Breyers Vanilla ice cream on top.
