MARASHINO  CHERRIES

4-1/2 pounds              Cherries, pitted
2 quarts                      Water
1 tbsp                          Pickling salt
1 tsp                            Alum
4-1/2 pounds              Sugar
1 -                                Lemon, juice of
1 ounce                        Beet juice ( red color)
1 ounce                       Vanilla or Almond extract (stage 2~)

Soak cherries overnight in water, salt, and alum.   Next day rinse and drain in cold water.  Combine sugar, lemon juice and food coloring in saucepan and heat until boiling.  Remove from heat and let set for 24 hours.  Next day bring to boil again and let set for 24 hours.  Next day bring to boil and add extract
Process in pint jars.
