CHEESE CAKE / GLUTEN & SUGAR FREE

2 pkg        Cream cheese, softened
                 Sugar substitiute to equal 1/2 C sugar { Stevia powder ~ 3 tsp)
1-1/2 tsp   Vanilla extract
1/2 C        Sour cream
2               Eggs

Dissolve sugar substitute in a 1/4 C warm water; cool.  Beat cream cheese and sugar substitute until well blended and creamy.   Add sour cream, and vanilla; beat again.   Add eggs, and beat.  Pour into greased 9 inch pie pan.  Bake in a  preheated oven at  325 for about 40 minutes or until firm. It will jiggle a bit.  Cool and serve.

OPTION:   If you like a denser cheesecake you can leave out the sourcream and add an extra 4 ounces of cream cheese.
