QUICK & EASY FRUIT COBBLER

1 stick butter
1 cup self-rising flour (or add a little salt and baking powder to all-purpose flour if you prefer - funny story at the end about this)
1 cup sugar
1 cup milk
about 2 cups of any fruit

Preheat your oven to 350. In a 2 qt dish, melt the stick of butter. Mix the flour, sugar and milk together and pour over the melted butter. Pour the fruit on top of the batter. Put in the oven, and bake until golden brown. Serve with Bryers all-natural vanilla ice cream.

Okay, here is the funny story. I got this recipe from my Mom, who is a traditional Southern cook, and therefore always uses self-rising flour for everything. I use all-purpose flour or bread flour. Well, when she gave me this recipe, she told me that "you just mix together the flour, milk, and sugar..." Well, I tried this recipe several times and it always came out real hard and chewy, and didn't rise any. Finally, one time I was at my Mom's house when she had fixed this. I mentioned to my sister-in-law that I had tried unsuccesfully to make the cobbler. She immediately said "Oh, she didn't tell you it's self-rising flour, did she. She did the same thing to me!" Now it comes out fine
