| CLARIFIED BUTTER 1 lb unsalted butter 1) In a heavy pan, melt 1 lb of butter over low heat only until the butter melts. 2) Turn of the stove and skim off the froth that appears on the top. 3) Carefully pour the butter into a glass jar, leaving the residue behind. Discard the residue. Notes: this makes 1-1/2 cups. You can store this in a cool, dry place without it becoming rancid. Clarified butter is excellent for cooking at high heat without burning. Since the the lactose is removed, it is lactose-free, and contains not transfatty acids. |
