SESAME TOFU CRACKER

Mix together in a bowl:
3 cups unbleached white flour or whole wheat flour
(Can substitute 11/2 cups corn meal +11/2 cups wheat flour
2 TBS. sugar)
1 tsp. salt
3 TBS. sesame seeds
1 tsp. baking powder

In a blender, blend until smooth and creamy:
1/2 lb. tofu
1/2 cup oil
1/4 cup water
(Alt: Add 1/2 cup chopped walnuts, 3 cloves garlic + top with Garlic Salt)

Make a well in the middle of the dry ingredients and pour in the blended mix. Mix well. Add up to 1/4 cup water if necessary to make a soft dough.

Roll out on a lightly floured board to 1/16" thick and cut in 3" x 14" strips. Place on a cookie sheet and cut the strips diagonally.

Bake for 12-15 minutes or until golden brown. Watch them carefully so they don't burn. These will keep well if stored in an airtight container.

Other additions: 1 cup Parmesan cheese and top with parmesan.
OR 1/3 cup wheat germ, 1/2 cup sunflower seed, top with garlic salt.
