Cornbread Casserole  

1 8 oz container of sour cream or plain yogurt
1/4 cup butter, softened
1 egg
1 can (drained) corn
1 can creamed corn
1 pkg. (8 oz) corn bread mix (I used Wahington)

Preaheat oven to 375
Grease a 2 quart caserole
Mix sour cream or yogurt, butter and egg (I mix on low speed with my hand mixer). Add corn creamed corn and corn bread mix (I stir this in with my rubber spatula). Mix well. Pour into caserole. Bake 55 min. Serve warm.
