| DAIRY FREE QUICK CORN BREAD 1 cup+ 1/4 cup of warm soymilk(you can also use rice dream or water)I have used all and all taste great!! 1 TBS + 1/4 TBS Heinz vineger Put these liquid ingr. together in a bowl and let sit while you mix the dry ingr. 1 cup cornmeal 1 cup flour(white) 2TBS sugar 1 tsp salt 1 TBS baking powder 3/4 tsp baking soda Stir sour milk(or your water) into your dry ingredients. mix quickly, stir just enough to get it mixed. Over stirring results in dry crumbly bread. Pour into a pan sprayed with cooking spray(I use Naturally Canola oil,but you could just grease it) Bake in pre-heated oven at 375 for 25-30 minutes. Let stand in pan for 10 minutes to cool. *note: I use a small glass pan usually to fix this quick bread. To make a loaf big enough to make a full size bread pan loaf double your recipe. This is a light tasting corn bread that we love and make at least 2xs a week. ENJOY!! |
