(EF,WF) CHOCOLATE CHIP COOKIE
cream:
1 cup (2 sticks) softened butter or margarine
1 1/2 cup brown sugar
1/4 cup water

Mix together:
2 1/2 cups spelt flour
1 tsp. baking soda
1/2 salt
1 tsp. xantham gum

Mix the two ingredient groups together along with 2 cups chocolate chips and 1 cup chopped walnuts or pecans (optional).

Spoon 1 inch blobs onto ungreased cookie sheet, flatten slightly with bowl of spoon. Bake at 350 degrees F. for about 10 minutes. Or bake as a pan cookie.
