These are sooo yummy! No matter where I bring them, people always ask for the recipe.
36 mini peanut butter cups - unwrapped
1/2 c brown sugar
1/2 c sugar
1/2 c softened butter
1/2 cup creamy peanut butter
1 egg
1 1/4 c flour
1 tsp baking soda
1 tsp vanilla
Cream together both sugars, butter, peanut butter & egg. Stir in dry ingredients & vanilla and mix well.
Form dough into 36 equal balls. (Dough won't be too sticky.) Place in greased mini muffin tins.
Bake @ 350 degrees for 9-10 mins. Remove when *just* starting to brown - middles will still be soft. (Watch them!) *Immediately* place unwrapped mini peanut butter cup in center of each cookie & press down. (It will sink into the cookie) Let cool about 10 minutes and then remove from pan.
