| GINGER Ginger Cookies 2/3 cup butter - softened 1/2 cup sugar 1/2 cup brown sugar 1 beaten egg 1/4 cup molasses 1 3/4 cup whole wheat pastry flour (you could probably substitute all purpose) 1 tsp salt 1 tsp baking soda 1 1/2 tsp ground cinnamon 1 to 2 1/2 tsp ground ginger 1/2 tsp ground cloves ** this makes it stage 2 Cream butter and sugar. Add egg and molasses. Beat well. Add the flour, salt, baking soda and spices and mix thoroughly. Drop by teasponfull onto a greased cookie sheet, and then flatten with the bottom of a glass that has been dampened with water and pressed in sugar. Bake at 350 for @10 minutes. Makes 5-6 dozen. |
