LEMON MOONS

Cookie:
4 large        Eggs
1/2 C          Vegetable oil
1-6 oz can   Unsweetened frozen pineapple juice
1/3 C          Lemon juice
2C              Unbleached white flour
1/2 tsp        Baking powder

Topping:
Grated lemon rind

In a mixing bowl combine egg, oil, pineapple juice, and lemon juice.  Beat in sifted flour and baking powder.  Mix well.  Drop spoonfuls of batter onto greased baking sheet.  Bake at 375 for 8 minutes or until cookies are slightly raised.  Do not overcook as cookies will burn.

Makes 5 dozen.
