1/2 to 2-1/2 inch strips of fortunes
3 Egg whites
3/4 C Sugar
1/8 tsp Salt
1/2 C Butter
1/2 C Flour
2 tsp Vanilla (Stage 2 ~ Almond extract)
Write fortunes on papers and fold in 1/2.
Preheat oven to 350 degrees. Beat egg whites until frothy; beat in sugar, and salt. Stir in butter, flour and extract. Bake 8-10 minutes or until golden brown. While cookies are warm, hold in your hand; place paper in the middle and fold cookie over paper Drape center of cookie over the handle of a wooden spoon. Fold edges of cookie over spoon until sides touch; slide off spoon. Repeat. If cookies become brittle return to pan for 1 minute.
Makes 3 dozen cookies
