Homemade Ketchup (STAGE 2) 

I use V8 Juice for my base, good flavor, less work!
Also, I am listing them because they are in the recipe, but I leave out the cloves and cinnamon.

3 qt. tomato juice (V8)
4t. dry mustard
1t. salt
4 cups sugar
5 drops oil of cinnamon
3 drops oil of clove
1 1/2 qt. sugar (Amish cookbook, wierd measurement!)
1 pt. vinegar
a little pepper

Boil until thick. (You may speed this process w/corn starch.) This may be canned, but keeps well in jars on the shelf also.
