COOKED MAYO


2                 Eggs
2 tbsp        Rice vinegar or Lemon juice
2 tbsp        Water
1 tsp          Dry mustard
dash          Pepper
pinch       Salt
1 tsp        Sugar or honey
1 C          Oil  of your choice

Mix all  except oil in blender or processor;   Pour into small saucepan and wash out blender or processor.  Cook the mixture over low heat; whisking constantly until bubbles just start.  Don't boil.  Let cool abput 5 minutes; pour mixture back into blender or processor.  While running machine on high slowly add oil.  This should cause mixture to emulsify and make a creamy product.  Store in a sealed container in refrigerator.
