SELF FILLED CUPCAKES

Prepare cake batter or approved cake mix. (I like chocolate.) Set aside.

For the filling...Cream together until light and fluffy:

11 oz. cream cheese (8 oz. package plus 3 oz. package)
1/3 c. plus 2 T. sugar

Add and beat well:

1 egg
dash of salt

Stir in:

12 oz. chocolate chips

Set the filling aside. Spoon cake batter into foil-lined muffin tins, filling 2/3 full. Spoon 1 heaping teaspoon of filling into the center of each cupcake. Bake at 350* for 25 minutes. Cool in pan 10 minutes then remove to wire rack. Makes 2-1/2 dozen cupcakes.
