| GERMAN CHOCOLATE CAKE Ingredients: 1/2 cup of boiling water 1 bar(4 onzs)sweet cooking chocolate 2 cups of sugar 1 cup of margarine or butter softened 4 egg yolks 1 teaspoon of vanilla 2 1/2 cups of cake flour 1 teaspoon baking soda 1 teaspoon salt 1 cup of buttermilk 4 egg whites stiffly beaten Heat oven to *350.Grease 2 square pans or 3 round pans.Line bottoms with waxed paper. Pour boiling water on chocolate,stirring until it is melted.Let cool.Mix sugar and butter until light and fluffy in a large bowl.Beat in your egg yolks one at a time. Beat in chocolate and vanilla on low speed. Mix in flour,baking soda and salt alternatley with buttermilk, beating after each addition until batter is smooth.Fold in your egg whites. Divide batter among your pans. Bake until a toothpick comes out clean(about 45-50 minutes)Fill in your layers and frost with whatever kind of frosting you like. I use Coconut-Pecan Frosting(recipe follows) Coconut-Pecan Frosting Ingredients: 1 cup of sugar,1/2 cup of butter,1 cup of evaporated milk,1 teaspoon vanilla,3 egg yolks,1 1/3 cups of flaked coconut, and 1 cup of chopped pecans. Mix sugar,butter,milk,vanilla,and egg yolks in saucepan. Cook over medium heat, stirring occasionally until thick(about 12 minutes). Stir in coconut and pecans.Beat until of spreading consistancey. |
