| Lemon Chicken
3/4 c. freshly squeezed lemon juice (4 lemons) 3/4 c. olive oil 2 t. salt 1 t. black pepper 1 T. minced fresh thyme leaves (1/2 t. dried) 2 lbs. boneless, skinless chicken breasts Whisk together marinade ingredients. Pour over chicken and marinate overnight or for at least 6 hours. (I use a ziploc and turn every once in a while.) Grill until just cooked through. Great served whole or sliced over a salad. |
