BAKED CHICKEN IN AN ONION SAUCE

Chicken Breast x4 (cut in 1/2, ....ie. 1/4 size breast x8)
Sauce
2tbsp butter
2tbsp oil
1 medium onion
2 heaped tbsp flour
2 cups chicken broth
splash cream
salt & pepper
Bay leaf
White wine (stage 2)

Swiss Cheese Slices

1) Set oven at 350
2) Sweat onions in butter & oil for 10 - 15 mins till soft
You could add garlic too if you like.
3) Add flour, and a little chicken broth
4) Emulsify with a blender (I use a small hand held one, so I don't even take it out of the pan)
5) Add rest of broth, bay leaf, salt & pepper. Stir till thickened.
6) Add splash of cream.... and wine if stage 2!
7) In flat baking dish lay chicken pieces with slice of swiss cheese covering each one. Then pour sauce over (Remove bay leaf)
8) Put into oven for 1hr.
9) Serve with rice and green veg.
