1 whole chicken (or chicken parts)
1/4 c. lime juice
2 T. garlic salt
1 T. olive oil
1/2 t. pepper
1/2 t. oregano
1/2 t. cumin
Combine all ingredients except chicken. Rub mixture onto meat and inside cavity (if using whole chicken). Place chicken in lightly-greased 9x13 pan, breast side up. Roast 60 to 70 min. at 400* until done. I've also done this in the crockpot...tastes just as good, but not as pretty.
