SNOWY MASHED POTATOES
4 lbs Potatoes (12 medium)
8 oz Crean Cheese (softened)
1 cup Sour Cream
2 tsp Salt
1/8 tsp Pepper
1 Garlic Clove, crushed
1/4 cup Chives, chopped
1/2 tsp Paprika (Optional - Stage 2)
1 T Butter

Cook potatoes in salted water until tender, drian. Mash potatoes in large bowl, add cream cheese, sour cream, salt, pepper and garlic. Beat at high speed (or mash by hand) until smooth and light. Stir in chopped chives. Spoon into greased 10 cup baking dish; sprinkle with paprika (optional - stage 2) and dot with butter. Bake at 350* for 30 minutes or until lightly golden and heated through.

Can be refridgerated or frozen before baking. (If frozen allow time to thaw).
