CROCK POT PUMPKIN PIE PUDDING

15 oz can pumpkin
12 oz can evaporated milk
3/4 c sugar
1/2 cup pancake baking mix
2 beaten eggs
2 Tbsp. melted butter
1Tbsp pumpkin pie spice (I just used cinnamon)
2 tsp vanilla

whipped cream on top if youd like or ice cream

1. Mix together all ingredients except whipped cream. Pour into greased crock pot
2. Cover and cook on Low 6-7 hours, or until thermometer reads 160 degrees
3. serve in bowls with whipped cream on top
Makes 4-6 servings
