LOLLIPOPS
(This recipe is from Sweet Creations ~ you can use their molds but their flavorings are not acceptable)  www.lollipopmolds.com

1 C         Sugar
1/3 C      Corn syrup or Simple syrup
1/2 C      Water
1/2 tsp     Flavoring
              Stage 1 or 2 coloring (ex. beet juice, tumeric)
              Lollipop sticks
              Metal lollipop molds (Warning:  the plastic ones melt)
              Cookie sheet that has foil on it, greased slightly
              Candy Thermometer

Prepare molds for use.  Follow package directions.  If you don't have molds you can set sticks out on greased foil and spoon lollipop mixture heaped up on end of stick. 


Combine sugar, water, and syrup in saucepan.  Cook on high heat until  mixture reaches 280. DO NOT STIR.  Then lower heat to medium and high and cook until  mixture is at 300 degrees(hard crack).   Remove from heat and wait until bubbling stops.  Add flavorings and coloring; do not overstir.  Be careful.. this is hot!  Spoon mixture onto stick or into molds.  This will spread quickly. 

TIP:  Soak pan in hot soapy water for easy cleaning later.
