CREAM CHEESE MINTS
1 (3 oz)package cream cheese
1/2 tsp peppermint extract
3 cups powdered sugar

Beat together cream cheese and peppermint extract. (Cream cheese may be softened beforehand to make this easier.) Add powdered sugar gradually and beat until smooth. The last of the powdered sugar must be kneaded in by hand. Roll into balls about the size of a cherry. Balls may be rolled in approved colored sprinkles if desired. Place on waxed paper and flatten with a fork. Let stand overnight. Makes approximatley 3 dozen 1-inch mints
