ROASTING MARSHMALLOWS

7 x 11 inch baking pan
powdered sugar

6 pkg        Knox gelatin
1/2 C        Water
2 C           Sugar
1/2 C        Water
1/4 tsp      Salt
2 tsp         Vanilla


Dissolve gelatin in water and set aside.   Dust baking pan with powdered sugar; try to cover completely.  In a saucepan bring sugar and water to a boil; boil for 3 minutes.  Remove from heat and whisk slowly  into gelatin mixture until thoroughly combined.  Pour mixture into mixer bowl and mix with an electric mixer until doubled in size and it forms a large ball around mixer blades.  Pour into pan covered in powdered sugar.  Let set for about 4 hours.  Use a table knife to cut along pan edge.  Remove marshmallows to a powdered sugar covered flat area.  Cut into marshmallow cubes with scissors  and dust with powdered sugar.
