ST. PATRICK DAY CANDY


1 large         Potato
                     Pinch of salt
2 tbsp           Butter
1 tsp             Vanilla
4-5 C           Powdered sugar
5 C             Sweetened coconut flakes

Peel potato and boil in water until soft.  In a mixing bowl mash potato with salt and butter.  Let potato cool
completely.  
Mix in vanilla and 4 C of sugar.  This should be stiff; if it isn't add more sugar.  Place 1/2 of coconut on waxed paper and roll batter until coconut is all picked up.  Roll in individual balls and roll balls in coconut. Store in refrigerator.
