TURKISH DELIGHT

3               Envelopes Knox gelatin
1/2 C       Cold water
1/2 C       Hot water
2-1/2C    Sugar
1/4 tsp      Salt
3 tbsp      Lemon juice
1/2 tsp     Lemon extract
1/2 C       Powdered sugar (sifted)


Soften gelatin in cold water; set aside.  In a sauce pan bring the hot water and sugar to a boil; stirring constantly.  Add salt and gelatin mixture.  Stir in well.  Remove from heat and let cool for 10 minutes; stir in lemon juice and extract.
Rinse a 6 inch square pan  with cold water; the pan  should be wet,  but with no water standing in it.  Pour mixture into pan; cover in plastic wrap and store in refrigerator.  .  Remove and seperate from edges with a knife.  Place powdered sugar on a flat surface and slice candy into squares; place in powdered sugar and roll; cover completely.

Makes 1-1/2 pounds.
