Powdered sugar for dusting
2 tbsp       Boxed unflavored gelatin
8 tbsp       Cold water
2 C           Sugar
1/2 C        Cold water
1/4 tsp       Salt
2 tsp         Vanilla

Dust an 8 x8  pan with powdered sugar.  In a small bowl soak 2 tbsp gelatin in 8 tbsp cold water.  Set aside.  Combine sugar, 1/2C water in a saucepan.  Cook and stir over medium heat until sugar is dissolved.  Add gelatin to pan and bring to boil.  Pour into a large bowl and let stand until partially cooled.  Add salt and vanilla; beat with electric mixer until soft and doubled in volume.  Pour into powdered pan to about 1/2 inch thick. Set to cool until it will not stick to fingers.  Cut into 1-1/2 inch pieces and roll in powdered sugar.

Note:  Toasted coconut can be substituted for powdered sugar











CAMPFIRE MARSHMALLOWS


Double the gelatin from 2 to 4 tbsp.
