NO YEAST BREAD (GF/YF)
3 3/8 cup amaranth flour (3 1/4 cup plus 2 tablespoons)
1 1/8 cup arrowroot (1 cup plus 2 tablespoons)
3 teaspoons baking baking soda
3/4 teaspoons unbuffered Vitamin C crystals
1 1/2 teaspoon salt (opt)
3/8 cup oil (1/4 cup plus 2 tablespoons)
1 1/2 cup water

Combine the flours, baking soda, Vitamin C and salt in a large bowl.
Stir
together the oil and water and mix them into the dry ingredients, until
they
are just mixed in. Put the batter into an oiled and floured 8 x 4 inch
loaf
pan. Bake at 350 degrees for 45 minutes, or until the bread is lightly
browned and a knife inserted into the center of the loaf comes out
clean.
Gently remove remove from pan immediately and cool it completely before
slicing.
