NO YEAST BREAD (GF/YF)
3 3/8 cup amaranth flour (3 1/4 cup plus 2 tablespoons) 1 1/8 cup arrowroot (1 cup plus 2 tablespoons) 3 teaspoons baking baking soda 3/4 teaspoons unbuffered Vitamin C crystals 1 1/2 teaspoon salt (opt) 3/8 cup oil (1/4 cup plus 2 tablespoons) 1 1/2 cup water Combine the flours, baking soda, Vitamin C and salt in a large bowl. Stir together the oil and water and mix them into the dry ingredients, until they are just mixed in. Put the batter into an oiled and floured 8 x 4 inch loaf pan. Bake at 350 degrees for 45 minutes, or until the bread is lightly browned and a knife inserted into the center of the loaf comes out clean. Gently remove remove from pan immediately and cool it completely before slicing. (This also can be used as sandwich buns) |
