Gluten free, low carb bread
1 cup ground nuts - almonds make the lightest textured bread but if you can't do stage 2 almonds it works great with any kind of nuts. I grind them in the coffee grinder. 2 tsp baking powder 2 beaten eggs pinch salt 2 TBSP oil or melted butter Mix all together, and pour into a greased bowl or muffin tins. Now comes the amazing part - you can either bake this at 375 (ish) for approx 7 minutes (check it - it really depends on how much you're baking at one time), or you can MICROWAVE it (yes, you read right!!!) for 2 minutes. That's not a typo - TWO minutes. When it's done it'll be dry on top - just touch it gently to tell. I have mixed in cinnamon and raisins (stage 2) and sugar to make sweet rolls, and I've mixed in Italian seasonings to make garlic bread. I've made it with peanuts and it tastes almost like peanut butter. I've made this with 1 cup flour (for those who aren't G/F) and spread it on sandwich plates to make pizza dough - the possibilities are endless! We're not G/F but DH and I are on a low carb diet so we eat this all the time |
