| IRISH SODA BREAD 2 cups flour 1/2 tsp baking soda 1 1/2 tsp baking powder 1/2 tsp salt 1 tlbsp sugar 4 tlbsp shortening 3/4 cup soured milk ( add a tbsp of lemon juice or vinegar to whole milk and set for 5 minutes) sift dry ingredients into bowl. Cut in shortening until uniform pieces appear in bowl. add milk. Knead briefly to completely mix. DO NOT OVERKNEAD - the bread will get tough if you do. Shape it into a round loaf about 3/4 inches high. place on tinfoil lined cookie sheet. bake at 375 for 30 min. let cool slightly and serve warm with butter. cut with a serrated knife using a sawing motion - do not crush. |
