| CHEESY BEEF ENCHILADAS (STAGE 2) 1 lb. ground beef 1 (16 oz) jar salsa 2 cups approved cheddar cheese, shredded 10 flour tortillas 1. Brown meat; drain. Stir in 1/2 cup of the salsa and 1/2 of the cheese. 2. Spread 1 cup salsa in a 13 x 9-inch baking dish. Place 1/4 cup meat mixture down center of each tortilla; roll up. Place torilla, seam-side down, on salsa. Top with remaining salsa and cheese. Spread top salsa around so everything has been touched by it, otherwise tortillas will get too dry. 3. Bake at 350 degrees F for 20 minutes or until throughly heated. Garnish with sliced ripe olives and/or sliced scallions, if you like. I like to serve this with rice, refried beans, guacamole, corn, and tortilla chips. |
